The sides bake normaly, but the middle falls.

It is like banana bread, it uses 1C jellied cranberry sauce,1 3/4 C flour,1tsp baking soda.......

Too much yeast, and it will rise and collapse. If you didn't use yeast it was because Oven temperature that's too low. This means the dough rises to its maximum, then collapses before it gets hot enough to set.

I'm not sure how much truth there is to this but I remember my aunt making all of us kids stay out of the kitchen while she was baking. Supposedly, if you make too much of a racket in the kitchen while you're baking your cake will fall. She said it was something about the vibrations from our foot steps.
