Ijust made a coffee sponge,and it didnt rise at all,i used a new electric mixer,but i am obiosly doing something wrong .help please?

The secret to a Sponge Bob Sponge:-
*Whisk the eggs and sugar until extremely thick and leaves
a trail when you drag your finger through it...
*Sift your flour at least 3 times before folding into the whipped
eggs..
*Sift flour into egg mixture in 3 parts .. A be very gentle when
folding flour in...
* Use Self-raising flour instead of Plain flour( It's cheating but )
*If all else fails add Teaspoon of Baking powder or Bi-carb
soda to the flour when sifting ..Your cake will be certain to
rise then .....

Better if you don't use a mixer if you want great results...FOLD the flour in so that it incorporates a Lot more air and put it immediately into a hot oven. Don't be tempted to peak at it otherwise it'll go down.

You can also add a teaspoon of baking powder to make it extra light. Are you using self raising flour?

I always use self raising flour, along with butter and sugar and only two eggs, but I use two teaspoons of baking powder in my mixture.
When checking to see if the cake is done, don't put a knife in the centre, just tap the top of the sponge and if it springs back into place, its cooked.

even if you use a electric mixture your mixture MUST HOLD THE FIGURE 8 FOR A FEW SECONDS WHEN YOU LIFT THE MIXTURE UP. YOU FOLD IN THE FLOUR GENTLY ,IN STAGES , AND YOU DO NOT DELAY WHEN MAKING A SPONGE ,get it in to the oven quickly .

hold the sieve high while you sift the flour to get plenty of air in
whisk by hand, lifting the whisk, again to get air in

and most importantly - dont open the oven while cooking - it will go flat straight away

What did you use? I always use the 8 to 4...eight 0f everything 'cept eggs, use 4.

add a teaspoon of baking powder to your flour and fold your flour into your mixture.
