Firstly, you need to cut the chicken in the joints, season it with onion, thyme, tomato sweet pepper and of course your regular chicken or all purpose seasoning. Some persons prefer to use a spoon to rub in the seasoning but i would suggest using your hands it gets all the flavors out. Before frying the meat take of all the seasons that are clung to it place it in some egg albumen (egg white) and then coat it with flour or just coat it with flour. When frying chicken you need a lot of oil(deep fat frying) place it into the oil turnover when crispy brown. After doing all of this turn down the flame and cover pot with lid so the chicken may soak and everything should be fried to the bone.

I usely skin my chicken first or buy skinless, boneless chicken, I mix flour, salt, pepper, and garlic powder together, dip the chicken in egg or milk then fry in cornoil or canola oil , till it is crispy on all sides, and then I place a lid on it and turn on low and let cook till tender, The drippings from the pan make a good gravy, just ad d flour, salt, pepper and brown, then add water and milk and simmer till thickened.

Very carefully! The way my family has always done it is just to mix flour with whatever seasonings you like and cover your chicken in that (you can use olive oil or a little bit of egg to make the mixture stick to the chicken), then fry it in oil, like canola oil or vegetable oil. But be careful....hot oil like that pops and splashes really easily and it's easy to get burned.

Be sure when you have coated the chicken that you tap of an excess, it will just make it mushy rather then crispy.
