Scramble two eggs and pour them into a large measuring cup. Dump 1/4 of it and that will leave you with 1.5 eggs.

If the eggs don't have to be separated into yolks and whites as part of the recipe, mix them together in a measuring cup and use half for the recipe. Freeze the rest, or make yourself a nice scrambled egg breakfast to go with the banana bread. :-)
One rule of thumb is usually one yolk to two egg whites when halving a recipe. If the eggs are to be made into meringue, you can whip up all of the egg whites and just use as much as you need to cover the pudding or pie.

Baked Stuffed Eggs 6 hard-boiled eggs 3-4 tablespoons sour cream 2 teaspoons prepared mustard 1/2 teaspoon salt Sauce 1/2 cup chopped onions 2 tablespoons butter 1 (10 3/4 ounce) can cream of mushroom soup, undiluted 1 cup sour cream 1/2 cup shredded cheddar cheese 1/2 teaspoon paprika Cut eggs lengthwise, remove yolks, set whites aside. On a plate, mash yolks and add sour cream, mustard, and salt. Mix well. Fill the egg whites with the yolk mixture. In a small pan, saute onion in butter until tender. Add soup and sour cream; mix well. Pour half of the sauce mixture into an 11x7 pan. Place stuffed eggs in sauce and spoon remaining sauce on top of eggs. Sprinkle with cheese and paprika. Cover and refrigerate overnight. Remove from fridge 30 minutes before baking. Bake, uncovered, at 350 degrees for 25 - 30 minutes or until heated through. Serve immediately.

Either 2 smaller eggs or take the third egg, scramble it and pour in half. Then make a mini biscuit and egg sandwich with the rest.

It's not that hard:
large eggs are 2 liquid ounces each
scramble them and use half
eggs increase or degrease in size by 1/2 oz per egg / per grade and unless specified otherwise; large is always the standard.
You may need to know that there are 2TBS to 1oz.

well i dont think you will be able to half your eggs if in doubt cut it to two eggs an then cut the rest of the recipe down an then you will have it .
