I don't know if you have ever purchased meat before but it is very expensive. That could be the problem. Time could be another I know I would rather not be cooking all night.GO online and find some recipes you enjoy and help out but keep $ and time a rule.Dinner should be family fun and healthy so if it isn't you could try to change it. I have been in cooking since I was a teen. I started at home making omelettes for dinner everybody like it except DAD he wanted meat usually hambuger. HAVE FUN Make dessert too.

here is a recipe for you to cook

Garlic and Herb Pasta

(This serves 2 really hungry people but can be spread out to 4 people if you serve it with a salad or something.)
 24 cloves of garlic, peeled (This is a really boring job but it's so very worth it.)
 2 T olive oil
 1 1/2 cup veggie broth or water
 a couple of Roma tomatoes and a little onion, maybe some red pepper
 ~2 T dried basil
 tarragon, oregano, pepper to taste (the more the better, usually 2 tsp tarragon is perfect)
 Whatever pasta floats your boat (I like penne or mostaciolli)

Sautee the garlic cloves (still whole) in the olive oil for 3 minutes, stirring frequently and being VERY careful not to burn them. If you do, throw em out and start over b/c burned garlic in this is REALLY gross. Add 1/2 c of the broth and turn the heat to low and let simmer for awhile, about 15 minutes or until the broth has evaporated mostly. [You should start the water for the pasta now.]
By this point, the garlic should be soft enough to crush with the back of a wooden spoon. Crush about 3/4 of them like this. Add the rest of the broth, the sliced up tomatoes, the chopped up onion, and the herbs.
I've actually never measured out the herbs I put in, so you should taste the broth and see how you like it. Wait a couple minutes for the tomatoes to shrivel up, add more pepper, and turn the heat off. Try not to drool into the broth. :)

There are tons more things to eat! Find a recipe YOU think sounds good and see if your mom will buy the ingredients. Offer to cook a night or two a week for the family. I'm sure she's tired and just relying on old standbys. That's what my mom did. If I didn't offer to make tacos or something, we'd be having steak. Hopefully your mom will be fine with having you cook!

Be honest but diplomatic, and tell her how you feel. Offer to buy her a new cookbook with some different recipes, or check one out of the library and show it to her.

Offering to cook and/or clean up might help, too. Speaking for myself, I get into a rut with what I cook because I'm just too darned tired to try something new. It's easier to stick with what you know when you're worn out because at least the meal will be edible.

And next time she goes to the store, offer to go with her. Maybe you'll see some foods that look interesting, and you can tactfully suggest them to her. Enthusiasm is contaigious, and if you support your mom and try to help her, she's more apt to listen to what you have to say.

Oh, and I almost forgot the most important thing: THANK HER FOR WHAT SHE DOES FOR YOU! If she knows that you appreciate her efforts to feed and take care of you, she's also more likely to want to make you happy. :-)

Look around on line for some easy recipes that sound good to you. Print a few out and show them to her and excitedly say how good they sound and you'd like to try them. Offer to help her cook the meal. Try www.kraftfoods.com for some easy affordable recipes. Good luck!!
