I know how to clip it out persay and delete the bakground but when I open the clipped image in a another program (Illustrator or InDesign) a white background shows up behind the clipped image. I am so frustrated because I see other people doing it so easy. I used to create a clipping path and open them in Quark without any background at all but now since the programs have all updated (I have CS for all of them) (I dont use Quark anymore BTW) I am lost as what to do...please help me!

purely be confident you go with the layer which you relatively pick to redesign (and not the masks) then CTRL + T or CMD + T (in case you're on a Mac), actual click interior the field which will seem and choose scale. this might mantein your image proportions. Cheers,
