INGREDIENTS
6 large potatoes, cooked, peeled and cubed
4 hard-cooked eggs, sliced
2 celery ribs, sliced
6 green onions with tops, sliced
6 radishes, sliced
1 teaspoon salt
1/2 teaspoon pepper
DRESSING
3 eggs, beaten
1/4 cup vinegar
1/4 cup sugar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1 cup mayonnaise or salad dressing
DIRECTIONS
In a large bowl, combine potatoes, eggs, celery, green onions, radishes, salt and pepper; set aside. For dressing, combine eggs, vinegar, sugar, dry mustard and salt in a saucepan. Cook and stir over medium heat until thickened. Cool. Stir in mayonnaise; mix well. Pour over potato mixture; toss to coat. Refrigerate for several hours.

Here is a potato salad recipe that I want to share with you.
8 medium red potatoes
1/4 cup chopped fresh parsley leaves
1/4 cup chopped green onion tops
1 cup chopped celery
3 hard boiled eggs, chopped
1/4 cup chopped bell pepper
1 teaspoon lemon-pepper seasoning
2 tablespoon salt
1 tablespoon Dijon mustard
1/4 cup mayonnaise
1 cup sour cream
In a large pot, boil the potatoes with the skins on for 10 to 15 minutes until tender. Let the potatoes cool just to the touch and cut into cubes.
In a large bowl, combine the remaining ingredients. Add the potatoes and mix gently.
Serve at room temperature.
If you don't want to have that much serving amount, you can cut down everything in half.

5 pounds red potatoes - cooked and cut up into chunks
1 red onion - chopped

salt and pepper to taste
Ranch dressing for the sauce - start with 1 1/2 cups and add more if you need to.
6-8 pieces of fried bacon - crumbled on top of the mixture.
This is an excellent potato salad, and tasty too! You can also add some parsley flakes if you want.

Simple Potato Salad
6 large potatoes - Boil with the skins on. Cool, peel and cube. Add to a large mixing bowl.
4 boiled eggs, chopped
2 stalks celery, diced
1 red onion, diced
4 large pickles, chopped
Mayo - how much is a matter of taste. I start with 1/2 cup and then if its not creamy enough add a bit more.
Mustard - a few squirts
Salt, pepper and garlic to taste.
Mix everything up and refrigerate.
Enjoy.

Classic Potato Salad
1 cup mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
5 to 5 med. potatoes, peeled, cubed, cooked
1 cup sliced celery
1/2 cup chopped onion
3 eggs, hard-boiled
1 to 2 Tbs chopped green onions, optional garnish
1 tomato, cut in wedges, optional garnish
PREPARATION:
Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add remaining ingredients; toss gently to combine well. Cover; chill for 2 or more hours for best flavor. Garnish with chopped green onion and tomato wedges if desired.
Serves 6 to 8.

I am 32 and from Ala., so I know alot about "tater salad". In making dinner for about 5 people I usually buy a 5 lb. bag of red potatoes. boil them on Med. til tender NOT-- falling apart.(skin on) That way they wont be "creamed taters!" anyway, drain the water and let them cool for a bit, and stir in ,with a big wooden spoon...... Dill relish or sweet relish or both...I USE BOTH! YUMMY! ! boiled egg crumbled, Mustard and Mayo. to taste (some people use Miracle Whip) salt, pepper, Chopped onion and some like to sprinkle a litlle Paprika in there too!! MMM--mmm! Hope you like it! There are many different ways to do it, I just know how my Granny taught me..Maybe I will read a new way. Good Luck!!!

yes you peel your potatoes depending how much you want to makean then chop some onions up an some bell peppers one will do if its a medium bowl an i use sweet relish about a half cup depending on the size a gain boil about 3 eggs an chop them in an then i use mircile wip in mine an its good an a little mustard to taste an you have your salad .

Nice small new potatoes, Jersey Royals are the best
Boil them till they are soft.
Then cover with lots of butter and a bit of salt and lots of Pepper.
Fry some chopped spring onions and add them.
Add some chopped chives
Bind it all together with Cream Fraich and Salad Cream - don't make it too wet.
*Add "Travell Guy's" chopped Radishes, that sounds good

Peel 5 lbs of potatos>boil till soft but not too soft>cut into about 3/4 inch pieces>cut up one or two large onions into slices or small squares, however you like them>4 to 6 hardboiled eggs, sliced (yolk and all).>put the whole works into a large enough container>mix with Kraft or Hellman's mayonaise to your taste>don't add salt, as the mayonaise is salty enough.

Potato salad (Basic): potato, egg, onion, celery, bell pepper, shredded carrots, spanish olives, sweet pickle, mayo, mustard, salt, pepper and more sliced spanish olives with paprika on top. Tuna salad: Tuna, mayo, minced onion, minced dill pickle. I prefer a simple tuna salad without sweet pickle. Potato Salad: (Quick and Easy) Canned new potatoes drained and dried with paper towel. Thin sliced red onion, sliced black olives, thawed frozen peas. Season with salt and pepper. Chill for an at least. Just before serving pour over ranch or blue cheese dressing. (I use homemade dressing). Top with crumbled bacon.
