Don't try to force anything; if he doesn't like you, there's nothing you can do about it. But a good way to find out (if you are comfortable with it) is to talk about your pasts, or your opinion about someone else's relationship (doesn't have to be gossipy, maybe something on TV, or in the news?).
If you notice that he's taking extra care to make sure your answers match up, or that what he looks for in a woman applies to you (and he knows it), he probably likes you. Example: My friend said he wishes he had big arms like some guy he saw in a picture. I said it's not going to attract all women, and I'm personally not attracted to muscular men.
Oh...and if he says he doesn't want to date, don't waste your time waiting for him to change his mind. It could happen, but he might also stick to his word, or he might date another random girl. Trying to move on will save much disappointment.
