Ok, its really simple! melt about 25-50g butter in a saucepan, and take off the heat,then add plain flour until it makes a thick but smooth paste. then place back on the heat and to begin with add about 250mls of milk! (whole milk makes a richer sauce but skimmed or semi can also be used). keept whisking over a medium/high heat until the sauce thickens. if it doesent after 5-7 minutes then add a little more flour and whisk again. When eventually it is thick, season with salt and pepper! You can also use this for cheese sauce, just simply add cheese!

Here's How:
In a small, heavy saucepan, melt 2 tablespoons of butter over low heat.
Blend 2 tablespoons of flour into the melted butter.
Add 1/4 teaspoon of salt.
Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize 'flour' taste.
Slowly add 1 cup of milk, stirring constantly.
Continue cooking slowly until smooth and thickened.
For thin white sauce, follow the instructions above, but use 1 tablespoon of butter and 1 tablespoon of flour. Thin white sauce is used in cream soups.
For thick white sauce, follow the instructions above, but use 3 tablespoons of butter and 3 tablespoons of flour. Thick white sauce is used in soufflés.
For heavy white sauce, follow the instructions above, but use 4 tablespoons of butter and 4 tablespoons of flour. Heavy white sauce is used as a binder for croquettes.
Tips:
To make the standard Béchamel, after adding the milk to the medium white sauce recipe add 1 small onion studded with 3 cloves, a bay leaf, and a grating of nutmeg.
Light stock, cream, or a combination may be used in place of the milk.
Add more flavor by seasoning with celery salt, nutmeg, a teaspoon of lemon juice, onion juice, or sherry, or a few tablespoons of chopped chives or parsley .

Classic Roux
3 Tablespoons Butter
2 Tablespoons Flour
1 Cup of Milk
1/4 Teaspoon Salt
Pinch of White Pepper
Melt butter over low heat, add flour, stir and bubble for approx. 5 minutes (this is called a roux). Do not allow to brown. Then slowly whisk in the milk and continuously whisk until mixture thickens. Add salt, white pepper & stir again.

2tbsp flour
1 cup milk.
Melt the butter, add the flour, mix and stir for about a half a minute. Remove from heat, add the milk slowly at first (a few tbsp at a time to start) and continue until the milk is all mixed in. Place back on burner (low/med heat), and keep stirring until it thickens, add spices or add mozza or cheddar cheese for a cheese sauce (great on broccoli, potatoes etc.)
