Shrimp Fra Diavolo, my favorite shrimp dish, made to impress.

INGREDIENTS
1 (16 ounce) package linguini pasta
1 pound cooked and peeled shrimp
8 cloves crushed garlic
2 (14.5 ounce) cans diced tomatoes
1 (28 ounce) can crushed tomatoes with garlic
2 teaspoons crushed red pepper flakes
2 fluid ounces red wine (optional)
DIRECTIONS
Peel and cook shrimp if necessary, and place in a bowl of cold water.
Place tomatoes, crushed garlic, red pepper flakes, and wine in a 3 quart sauce pan. Simmer over low heat for 30 minutes, stirring occasionally.
While sauce is simmering, cook linguini according to package directions. When pasta is almost done, drain shrimp and place in the bottom of a large colander. Drain the pasta over the shrimp. Transfer pasta with shrimp to a large serving bowl, and toss together with some sauce. Serve remaining sauce on the side

Scampi

Very simple recipe, good standby.

Add a couple tablespoons of real butter to a (medium low temp) skillet. Add a couple cloves of minced garlic, a half onion very finely minced, a handful of chopped cilantro or italian parsley, and sautee until very aromatic, about three minutes. Add a couple chopped roma tomatos to the the pan and sautee for about one minute. Add your peeled and deveined shrimp. Sautee all for about two minutes or just until the shrimp turn coral colored. At this point pour the whole mixture over rice or pasta.

This recipe takes about 10 minutes from start to plated.

I sometimes add a little chili paste to the butter in the beginnine, if you like spicy this is a good thing.

One of my favorites is blackened shrimp with sauteed mushrooms served on top of fettuccine Alfredo with garlic toast and a nice wine.
dredge your shrimp in your favorite blackening season. cook fast in hot olive oil.remove to a bowl before completely done(it will cont. to cook on it,s own and you don't want rubbery shrimp)saute mushrooms separately add the two together and serve on top of fettuccine alfredo.you can find really good alfredo prepared if you would rather not make your own.

Crispy Coconut Shrimp:

Serves 4; prep time: 35 minutes; total time: 35 minutes Cook rice for everyone.

1 1/2 cups sweetened shredded coconut

3/4 cup plain dried breadcrumbs

2 large egg whites

1 1/2 pounds medium shrimp, peeled and deveined (tail on)

Coarse salt and ground pepper

4 cups vegetable oil

Bottled sweet-and-sour sauce, for serving

1/2 cup plain yogurt

1 tablespoon fresh lime juice

1 teaspoon Dijon mustard

1/4 teaspoon curry powder (preferably Madras)

Lime wedges, for serving (optional)

1. For the Kids (Serves 2) In a food processor, pulse together coconut and breadcrumbs until coconut is in small pieces; transfer to a shallow bowl, and scatter a handful over a baking sheet. Set aside. In another shallow bowl, lightly beat the egg whites.

2. Toss shrimp with 1 teaspoon salt and 1/4 teaspoon pepper. Working in batches, dip shrimp in egg whites to coat completely; lift from whites (shaking off any excess), and dredge in coconut mixture. Lay on prepared baking sheet.

3. In a large, deep heavy-bottom pan, heat oil over medium heat until 350° on a deep-fry thermometer. Cook half the shrimp, lightly shaking to separate shrimp, until golden brown, 2 to 4 minutes. Use a slotted spoon to transfer shrimp to paper towels to drain. Return oil to 350°; repeat with remaining shrimp.

4. Reserve half the shrimp for the adults. Serve remaining shrimp with sweet-and-sour sauce.

5. For the Adults (Serves 2) In a small bowl, whisk together yogurt, lime juice, mustard, and curry powder. Serve the sauce with reserved shrimp; garnish with lime wedges, if desired.
