Why do potato chips taste nothing like mashed potatoes? Why does hamburger tasted nothing like prime rib? Why does wine taste nothing like vinegar?

For the same reason Soy milk tastes nothing like Soy crisps, or Soy protein bars.
Soy sauce is made by a fermenting and steeping process.

Soy Sauce is fermented. Tofu is not.
