Agree - got to be maris pipers, the best by far for chips.
Go exotic and try gorgonzola or roquefort melted a little, with some onion relish on the side. Couple of gherkins won't go amiss either.
Alternatively you can get that Mexican cheese with chillis/peppers in it - give it a try.

Yes defiantly Maris Piper potatoes and extra mature Cheddar, with crispy bacon and fried onions mixed in as well, put under the grill until all the cheese has melted

yup you can't beat cheezy chips. Unless you stick some sweet chili source on top of some chunky chips. Tri Mae Ploy Sweet chilli dip. Can't beat it.
