Salt Cod and Lobster Cakes
Ingredients:
½ pound boned Salt Cod
¼ pound Lobster meat, cooked
2 Tbsp olive oil
¼ cup red bell pepper, diced small
¼ cup yellow bell pepper
¾ cup onions, diced small
2 Tbsp Parsley, fresh

pepper
1 cup cooked mashed potatoes
1/2 cup vegetable oil
¼ cup milk
1 cup flour
2 cups breadcrumbs
Creole seasoning
3 large Eggs
Directions:
1. Soak salt cod in a bowl of cold water in the refrigerator for a day, changing the water frequently.
2. Add the oil to a large skillet and sauté the onions and peppers for about a minute.
3. Season with salt and pepper.
4. Break up the salt cod and add to the pan. Cook for 6 to 8 minutes or until cooked through.
5. Remove from heat and cool.
6. In a mixing bowl blend the salt cod mixture with the lobster meat, potatoes and 1 egg.
7. Season further with salt and pepper. Form into 12 cakes.
8. In a separate bowl whisk together two remaining eggs and milk.
9. Dredge each cake in flour, then in the egg wash.
10. Season with Creole seasoning and coat with breadcrumbs.
11. In two large skillets add a ¼ cup of oil.
12. Pan fry the cakes until golden brown and heated through, about 4 or 5 minutes on each side.

Salt Cod Fisherman's Stew
Ingredients:
1 lb Salt Cod
1 Tbsp olive oil
2 cloves garlic, minced
1 large yellow onion, chopped
2 stalks celery, sliced
1 green pepper, chopped
2 carrots, sliced
1 15 oz can diced tomatoes
2 cups tomato juice
1 tsp oregano, dried
1/2 tsp thyme, dried
1 tsp parsley, fresh
1 bay leaf
Directions:
1. To prepare Salt Cod: Let cod soak in cold water for at least 24 hours before use. Change water 3-4 times. Cut into chunks after preparation.
2. To prepare Stew: In a large saucepan heat olive oil over medium high heat and sautè garlic, onion, celery, green pepper and carrots about 10 minutes or until slightly tender.
3. Add tomatoes, tomato juice, oregano, thyme, parsley and bay leaf. Simmer for 20 minutes.
4. Add the cod and cook 10 more minutes.
5. Remove bay leaf and serve.

Salt Cod Fritters
250 g (1/2 pound) salt cod, chopped, skinned and boned
30 g (1/4 cup) flour
250 cc (1 cup) milk
1-1/2 tbsp olive oil
1 egg yolk
2 egg whites
1/2 garlic clove, crushed
1 tbsp minced parsley
1 liter (4 cups) olive oil for frying
Freshly ground black pepper
Soak the salt cod for 24 hours in plenty of cold water, which must be renewed every 8 hours. Drain it and bring
to a boil in water to cover. Reduce the heat. When froth begins to form in the water, drain and crush the fish to
a paste in a mortar. Mix the cod with the oil and the flour in a bowl; add the egg yolk, lightly beaten, and the milk. Add the crushed garlic, the minced parsley and pepper to taste. Stir thoroughly. Beat the whites till stiff and mix with the cod paste immediately before frying the fritters. Drip small spoonfuls of the paste in hot (smoking slightly)
frying oil. Wait until the balls rise and are light golden brown. Leave on paper towels to drain.
