My mom found a vanilla honey she really likes that's only available by mail order, and I'd like to try to find a way for her to make it home-made. Does anyone have any suggestions?

Here is the easiest way to flavor honey.

Basic Method

The method for making each of the flavors is basically the same:

Start with one cup of pure honey and simply vary the main flavoring ingredient.
Main flavoring ingredient suggestions:
Vanilla bean
cinnamon stick
cloves
orange peel
lemon peel
star anise

Place the honey in a small saucepan. Add flavoring. Bring just to a boil; reduce heat immediately and simmer for five minutes. Remove from heat and let stand for ten minutes (note: only cinnamon-clove needs to stand for 24 hours).

Strain while warm. Place in sterilized jars.

This is my dad's recipe. He is a bee keeper.
Enjoy!

Use the best quality REAL vanilla extract you can afford. You'll have to experiment with the amount needed to duplicate the flavor you are looking for, but I 'd start with one half teaspoon to two cups honey. Also, the lighter the honey, the lighter the taste so it won't try to overwhelm the vanilla flavoring.

Couldn't you just take a small amount of vanilla extract and add it to some honey? That's how I make my butter/honey.

try taking 1 cup of Honey and 1 vanilla bean, it will take awhiloe to infuse the flavors unless you put it all together and heat it till it boils, then put into a clean glass jar for storeage.
