You realize that any recipe that calls for onions, you can simply omit the onions, right?
Inexpensive translates well with hamburger, make taco, chili, taverns, meatloaf, etc....I don't use a recipe per se with any of those, just make them the way my family likes them. You really can't screw any of them up.
Chicken can be relatively cheap, grill up some breast with your favorite BBQ sauce and make a salad and baked potatoes. Or cut up boneless chicken breast and cook with some fajita seasoning and heap on tortillas with your favorite toppings.
Pork cutlets are cheap, lightly flour and salt/pepper, cook in a skillet (you don't necessarily need much oil), you can add some cream of whatever soup or gravy to the pan when they are brown and serve over rice of with potatoes.

this doesn't have any onions
Garlic and Herb Pasta
(This serves 2 really hungry people but can be spread out to 4 people if you serve it with a salad or something.)
ï· 24 cloves of garlic, peeled (This is a really boring job but it's so very worth it.)
ï· 2 T olive oil
ï· 1 1/2 cup veggie broth or water
ï· a couple of Roma tomatoes and a little onion, maybe some red pepper
ï· ~2 T dried basil
ï· tarragon, oregano, pepper to taste (the more the better, usually 2 tsp tarragon is perfect)
ï· Whatever pasta floats your boat (I like penne or mostaciolli)
Sautee the garlic cloves (still whole) in the olive oil for 3 minutes, stirring frequently and being VERY careful not to burn them. If you do, throw em out and start over b/c burned garlic in this is REALLY gross. Add 1/2 c of the broth and turn the heat to low and let simmer for awhile, about 15 minutes or until the broth has evaporated mostly. [You should start the water for the pasta now.]
By this point, the garlic should be soft enough to crush with the back of a wooden spoon. Crush about 3/4 of them like this. Add the rest of the broth, the sliced up tomatoes, the chopped up onion, and the herbs.
I've actually never measured out the herbs I put in, so you should taste the broth and see how you like it. Wait a couple minutes for the tomatoes to shrivel up, add more pepper, and turn the heat off. Try not to drool into the broth. :)

Aunt Clara's cassarole. My family loves it. Here you go:
Pre-heat oven to 375 degrees.
1 pound ground beef, browned and drained. (i use ground turkey. It's leaner.)
1 can green beans, drained
1 can tomato soup
1/2 of the soup can of water
About 2-3 cups noodles, cooked and drained
Several slices of American cheese
Mix all the ingredients together. Pour half the mixture into a 2 quart casserole dish. Cover that half with a single layer of the cheese (usually takes about 5 slices). Pour remaining mixture on top of cheese and top with another single layer of cheese. (usually 6 or 7 more slices). Bake uncovered in the oven 375 degrees for 25 minutes (cheese will just be starting to brown).
This is my mom's recipe. We loved it. Hope your family does too! Best wishes!

Follow any recipe that you like and leave out the onions. That simple. If you don't like anything else leave it out or add something that you do like.
