I use butter, brown sugar, salt and pepper. Extra super yummy.
edit: and always use fresh carrots. Frozen carrots aren't that great and canned carrots outta be illegal.

Until just recently I had never tried glazed carrots, to me they are just fine fresh, boiled or roasted in opinion. My sister made some and they were fabulous. Here is her recipe for glazed carrots so they will be more edible.
12 medium carrots, cut into 1 inch pieces
1/2 cup packed brown sugar
3 tablespoons butter or margarine
1 tablespoon grated lemon peel
1/4 teaspoon vanilla extract
DIRECTIONS
In a saucepan, cook carrots in a small amount of water until crisp-tender; drain. Remove and keep warm. In the same pan, heat brown sugar and butter until bubbly. Stir in lemon peel. Return carrots to pan; cook and stir over low heat for 10-15 minutes or until glazed. Remove from the heat; stir in vanilla

I thought carrots were eatable enough.... but what I sometimes do is, put some water, brown sugar and butter in a pan, just enough to cover the carrots, cut them into big chunks or use chantennay carrots. Cover and simmer for about 45 mns. The water evaporates and you end up with tasty, glazed carrots. Alternatively eat organic carrots, they taste delicious as they are.

Use only 'cooked carrots' ... pour all of the 'water' off and put in a pat of butter and 1-2 tablespoons of sugar or brown sugar, and heat until the sugar is melted and 'glazed' onto the carrots.

First peel and boil, then transfer drained carrots to a skillet with 2 Tablespoons butter melted & either 4 Tablespoons brown sugar, white sugar or corn syrup. Heat gently as you coat the carrots, then turn up heat for glaze to thicken and bubble. Optional: dust with nutmeg or sprinkle w/ a few chopped pecans.

Make a little glaze with butter, brown sugar and maple syrup in a small pot and add the steamed carrots or add fresh carrots and simmer in the glaze until done. Add chopped pecans or walnuts just before serving.

Absolute simplest way to glaze a carrot is to boil them till tender then melt butter and honey in pan till boiling and pour on top of carrots. If your feeling extra special add some cinnamin, nutmeg and sprinkle of brown sugar in the boiling honey. Done. They are sweet on their own they really dont need alot of added crap.

put your sliced ,diced, baton carrots in a saucepan, barely cover with water dash of salt and 1 teaspoon of sugar.cover with a lid and cook until nearly tender.remove the lid and pour off all the liquid, return to the heat add a nob of butter, salt and black pepper, toss the carrots around in this untill fully cooked.they will have a lovely glaze.
another good way is to put carrots in an oven proof deep dish, warm a little honey and orange juice till the honey is very runny, pour over the raw carrots and mix until all are coated, cook in the oven for 20 min approx or till tender, nice with a sunday roast....mmmmmmmm

The best way i find is to cook the carrots in orange juice and veg stock, then whilst they are cooking reduce some orange juice and sugar until it makes a syrup. when the carrots are cooked toss in a pan with some of the syrup and serve. hey presto! fantastic carrots.

place them in a pot or casserole dish, cover with water, honey, and brown sugar. You can add cinnamon as well or top with cinnamon after wards. Simmer in pot til carrots are soft or bake in oven at 325 degrees for 25 minutes or until golden brown.
