If you don't count the growing process of the fruits then the role of biology is mainly in conservation.Which means that the jam has to be preserved from the attack of the microorganizms.Traditionally people use loads of sugar for conservation.There are synthetic preservatives used too and then less sugar is required.I think the biological research comes in at finding newer preservatives, although I'm not sure because I just do home jam cooking.We use salicil and sodium-benzoat.
