Buffalo Chicken Dip

INGREDIENTS
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks® Red Hot®
1 1/2 cups shredded Cheddar cheese

1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers
DIRECTIONS
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

** Every time I've made this for a get-together I get requests for the recipe! It's totally not too spicy.

I made this one year, and everyone requests it over & over. The "mystery" ingredient is the saurkraut. It cooks down & noone seems to realize it is in the mixture. Even people who would not eat saurkraut LOVE these meatballs.

Appetizer Meatballs: 1 bag frozen Italian seasoned meatballs; 1 jar chili sauce; 1 can jellied cranberry sauce; 1 can Bavarian Saurkraut

I thaw the meatballs overnight in the refrig. Place meatballs first, then saurkraut into slow cooker. Mix the chili sauce & cranberry sauce together well. You can add a small amount of apple juice or red wine to rinse out the chili sauce bottle. Pour over the kraut & meatballs. Cook on low setting for 4-6 hours, or high for 2-3 hours before serving. Stir very carefully 2-3 times during cooking & once before serving. I put fancy cocktail picks, or just toothpicks next to the slow cooker for easy serving.

Ever So Yummy Meatballs!

1 egg, beaten
1 5 oz. can evap. milk
1 cup oats
1/2 c. finely chopped onion
1 tsp salt
1 tsp chili powder
1/4 tsp garlic powder
1/4 tsp pepper
1&1/2 lbs ground beef

For Sauce:
1 cup ketchup
3/4 cup brown sugar
1/4 cup chopped onion
1/4 tsp garlic powder

In bowl, combine first 8 ingredients. Crumble beef in bowl and mix well. Shape into 1 inch balls; place in greased 13x9x2" dish and bake uncovered for about 20 minutes at 350 degrees.

Meanwhile, combine sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes stirring frequently. Pour over the meatballs and bake for 10 minutes longer.

Since they have to make it to the office you can then put them into a crock pot and keep them warm in that. Bring toothpicks or a ladle so they can be scooped out. These are on the sweet side and ooohhh sooo good!

4 boneless skinless chicken breast halves, or you can use roasted chicken already cooked if not boil and shredded
1 12 ounce bottle hot sauce
2 8 ounce packages of cream cheese
1 16 ounce bottle Ranch dressing
1/2 cup chopped celery
8 ounces Monterey Jack cheese or Cheddar Cheese, grated

In a 13x9x2 inch baking pan, combine the shredded chicken meat with the entire bottle of hot sauce, spreading to make an even layer.
In a saucepan, combine the cream cheese and ranch dressing over medium heat until smooth.
Pour this mixture evenly over the chicken. Sprinkle with chopped celery and then shredded cheese.
Bake uncovered at 350 degrees for 30-40 minutes or until bubbly. (Watch that the top doesn't get browned.) Let stand 10 minutes.
Serve hot or warm with Doritos "Scoops" (you need a sturdy chip for this!) or celery sticks.

Garlic Mushroom Nibbles

Ingredients

6 mushrooms
1 clove garlic
1 tablespoon chopped parsley
vegan puff pastry

Preheat the oven to 200 degrees.

Chop up the puff pastry into squares which are the size you wish your nibbles to be. Pile several squares on top of each other so that it is about 2 cm tall and press them together at the edges. Bake in the oven until risen and golden brown. Once cooked put on a cooling tray for 10 minutes.

Cut the mushrooms into small pieces and crush the garlic. Fry in 2 tablespoons of oil until the mushrooms are golden brown. Once the pastry has cooled press in the middle to form a hole to put the filling in. Spoon on some of the mushroom mixture and sprinkle with the parsley.

Serve immediately.
