chicken salad i think, i need to start eating healthier=)

Freebirds!

For those of you who "ain't from around here", Freebirds is a burrito bar where you choose the size and type of tortilla and then choose the fillings that get stuffed into the usually monstrous sized finished product.

I think I'll have a spinach tortilla stuffed with both cheeses, white meat chicken, re-fried beans, grilled veggies, roasted garlic, red onions, cilantro, pico de gillo, and lettuce. I'll top it off with the habenairo pepper sauce at the table.

Pasta with home canned tomatoes, portobello mushrooms and fresh green peppers, mixed with a fish stirfry I made previously. I always try to make meals with fresh vegetables if possible, so the shrooms and peppers are fresh, while the tomatoes were grown in the garden in the back field and canned by my father-in-law three years ago. The pasta is storebought bulk rigatoni though; my expertise doesn't extend that far...been buying unsulfured dried fruit at the health food store too. I like to eat that for dessert.

P.S. Travis, the "Freebirds" sounds absolutely delicious...I'm SURE there isn't one around here, unfortunately...

I am having a lettuce salad and a can of cooked peas.... I'm not only trying to eat healthier lately but I've been cleaning out the pantry and refrigerator! lol! Time to get creative and use what I have on hand.... finances are tight.

I am trying a new eating plan wherein I eat whatever I want as long as I eat a salad first. So, I am having a salad and leftover pot roast, carrots and potatoes. Yogurt smoothie for dessert.

Lunch has been and gone. I had a very naughty lunch, Doritos and chocolate...and Im a diabetic too! Blood sugar is a bit high now :(

i know i need to start eating healthier, but today i am eating pieces of cheddar and small slices of pepperoni.....i had a craving and i cant wait for lunch....i can taste it now
