Black and Blue!

Season a good New York Strip on both sides with cajun seasoning. Put on an outdoor grill at max heat with pats of butter on top. The idea is to keep the steak ON FIRE (yes, covered in flames) the whole time. This chars the outside black, but leaves the center of the steak rare (blue). It only takes a couple minutes on either side. Make sure you put more butter on top once you flip it.

Personally charcoal grilled.I think it brings out the taste of the meat better than any other way and the cooking process seals the meat very quickly.
But so long as its on the rare side I'm not too fussy apart from having to know where the steak came from to begin with

Smothered with fresh cracked (not ground) peppercorns, minced fresh garlic and light salt, then grilled over a direct medium fire until medium rare (I use the cookout calculator at charcoalbob.com to determine the perfect grilling time per side).

I also allow the steak to stand 20-30 minutes at room temperature before grilling, and let it rest for at least 5 minutes after grilling to allow the juices to absorb back into the meat.

When the weather is nice, on a charcoal grill outside. When the weather is lousy, I marinate the rib eye in a little Worcestershire sauce for a couple of hours. Then I slap it on my Foreman Grill ( sprayed with Pam first !!!)... and flip it after about three minutes so it is medium rare. Then I saute some onions and fresh mushrooms in butter and garlic.. The sauce goes on the steak.... and that, my friend, is how you reach nirvana !!!

on the grill, with sea salt, black pepper and garlic.Cooked to a nice meduim.

If cooked inside, seared on a cast iron skillet, with the seasonings mentioned above..
