Just be safe and store your eggs and milk in the refrigerator. In Europe, there is UHT milk which is vacuum packed and stored at room temp (AS LONG AS IT IS NOT OPENED). But even the makers of UHT milk instruct you to refrigerate after opening. If the eggs are consumed quickly, then you might be able to get away without refrigeration. But if you eat just 1-2 eggs, per week, the rest of the dozen eggs are likely to spoil.
The original reason for refrigeration was not to make your foods cold. It was to slow the growth of bacteria (and thus slow down spoilage).

well, the chickens just lay them and they lay around in the chicken house until they get picked up, which, unless it's winter, is not cold, and, of course, in the old days, there was no such thing as a refrigerator. i guess it's just the old-fashioned way of doing it. apparently, it's not hurting anyone in those countries that leave them out. i'm sure it would not be good to keep them someplace really hot, and it probably also depends how fast you use them, but probably leaving them out at a mild temperature for a few days is not that harmful. they probably DO last longer if you put them in the fridge, but perhaps they are not concerned about that. a lot of folks just buy what they need for the short-term, they do not store food the way that we do.

Apparently eggs don't rot until after three weeks without refrigeration. When eggs are rotten, you know it's rotten by the foul smell. Most people use the eggs they buy up before three weeks are over.

Think about people who live on farms ans stuff too.. not sure if you've ever really seen a farm family, but they gather eggs from their chickens and they're kept in bowls on the counter.. I learned this in a school project. It doesn't make the eggs spoil to leave them unrefridgerated, they just won't stay good as long.

I would think that if you put them in the fridge they would last longer, mauybe its a mtter of taste or personal choice I guess. Whats really weird is when I went to Germany they didnt keep their milk in the fridge either. I kept putting it in the fridge and my great grandma kept taking it out. I would think it is safe since so many people do it, they just dont last as long. I would say it is a learned behavior.
