Be flattered, and arrange dinner with all 3.
I would go to the same restaurant. See the first at 6, the next at 730 and the one after that at 9, actually not the same restaurant, find somewhere with 3 restaurants next to eachother.
I wouldnt eat a lot at all, which is acceptable being a girl.
You could be honest with all 3, and find out why they are asking you out? Because they like you? Want to do something on Valentines day? Or because they feel you should be doing something on Valentines.
Or you could say you are busy on Valentines, taking your friend/mum/ sister out, and why dont you do something over 3 seperate days with them?

I would accept each offer, but not for Valentine day for any of them. Make it on a day that does not hold so much meaning to it. Invite a friend out on that day, who may not have a date and have a good time. Your three dinner invtes can wait for another day. Good Luck

If they are all just friends, why not have dinner with all of them together?
If they are all trying to be something more, then decide which one you like best and go out with them! Do what's best for you!

I feel your pain. Same exact thing happened to me last year. I went out for breakfast with one guy, lunch with another guy, and dinner with the best guy (who happened to be the 3rd guy). I felt like a pig and a P-I-M-P at the end of they day. It all worked out. No ones feelings was hurt. But that's just me....

Well it is valentines day and which ever one you would go with would assume that you really like them and only them. I would decline only because of the commercialized reason for Valentines day. If they ask you out for any other day, go for it.

decline...
