I want to see who can up with the best recipe that tastes good but also is low in fat....I don't eat red meant....Best recipe gets 10 points....LOL....I am expanding my cooking skills

Here's a great no fat soup! Super super easy too!

Carrot Ginger Soup

1 onion, diced
8 carrots, chopped
1 inch of fresh ginger, peeled and sliced
1/2 green pepper, chopped
6 cups of fat free, low sodium chicken or vegetable broth
1/2 white wine (optional)

In large pot, simmer all the ingredients until carrot is tender. Reserve 2 cups of the liquid. Puree remaining ingredients until smooth. (you can use a blender, food processor or my favorite - immersion blender). Add enough of reserved liquid to get a good consistency.

Makes 4-6 servings.

One of my favorites - assuming you will eat chicken... take:

1 box of Perdue Short Cuts Grilled Chicken Breast Strips
1 package of Lawry's Chicken Taco Seasoning
1 can of Black Beans - Safeway's Organics brand is good
2 whole diced tomatoes

Cook the chicken with the taco seasoning per the directions on the taco seasoning packet. Drain most of the liquid from the beans and stir in the beans and tomatoes. This makes 3 servings for me.

The entire batch is:
696 Calories
4.5 g Fat
1.5 g Saturated Fat
96 g carbohydrates
25.5 g fiber
67.5 g Protein

so - if you make it 3 servings, divide those numbers by 3. If you have a smaller appetite than me, divide by 4.

It's good, and it takes almost no time to make - maybe 10 minutes. It's good reheated, so I'll make a batch on the weekend, and put it into 3 tupperware containers. Lunch for two days, and dinner for one. Yummy.

Warming Winter Stew

Ingredients

1 large potato
1 carrot
1 large onion
1 leek
1 tin chick peas or black eyes beans
vegetable stock cubes
marmite
vegetarian worcestershire sauce
tomato paste or sauce
I parsnip
2 sticks celery
1 sweet potato
peas


This stew can easily be made from any left over vegetables but it important to have potato, carrot and onion to give some sweetness to the gravy. Chop all of the vegetables to the same size pieces and put in a large saucepan.

Cover with boiling water and add 2 stock cubes, a spoonful of marmite, a teaspoon of vegetarian Worcestershire sauce and a squirt of sun-dried tomato paste or ketchup. Bring to the boil and simmer for 20 minutes. Then taste the gravy and season to taste.

this is a really yummy meal that you can make with about 10-15 dollars.
ingredients Extra Virgin Olive oil (you can get it cheap at aldi's if you have one near by about 2.99
thin spaghetti noodles $1
white pasta sauce (parmesean mozzarella is best) $2.50
cherry or grape tomatoes as much as you like, sliced (about $3)
frexh garlic (you only need 1 or 2 cloves so maybe $1)
1/2 onion
whatever seasonings you like (i like Mrs dash table bland and italian seasoning)

boil water for the noodles, cook the noodles as per the directions. you want them a little firm, not too mushy

Put a little of the oil in the pan. cut the onions and garlic as small as you can. sautee it until the onions are transparent

add the noodles to the onion garlic mix and pour sauce over it (all in the frying pan) you dont want it to be dripping with sauce, just enough to hold it all together.
add the tomatoes.
serve with garlic bread if you like.
make sure you have some mints or gum for after as it is hard on your breath but it is very pretty, simple and soooo good!!
if you want it a little fancier, add some strips of chicken or shrimp to it

not too terribly fatty and delish!

Oh so good- this is something I make at least once a month.

roasted red peppers (from the jar)
chicken breast pounded thin (if you don't have a mallet, you can buy the thinly sliced chicken breasts)
a lil bit of lemon juice
oregano
mozzerella cheese
toothpicks

You take your chicken breast, squirt a dab of lemon juice on top. Then sprinkle with oregano, place a roasted red pepper on top and then add some cheese. Roll it up from one side and secure with a couple of toothpicks. Place the chicken rolls on a glass pan sprayed with Pam and then cook at 350 degrees in oven for about 20 minutes. Or until chicken gets toasty on top and cheese is allll melted.

I usually serve with brown rice and a veggie like steamed brocolli.

Soooo yummy!

MEDITERRANEAN LEMON PEPPER CHICKEN


INGREDIENTS
1 lemon
2 teaspoons dried oregano
3 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
6 chicken breasts
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
In a 9x13 inch baking dish, grate the peel from 1/2 the lemon, squeeze out the juice (about 1/4 cup) and add to peel with the oregano, garlic, oil, salt and pepper. Stir until mixed.
Coat chicken pieces with the lemon mixture and arrange in the baking dish. Cover dish and bake for 20 minutes. Turn and baste chicken.
Reduce heat to 400 degrees F (205 degrees C) and bake uncovered, basting every 10 minutes, for about 30 more minutes. Serve chicken with pan juices.
