I want to see who can up with the best recipe that tastes good but also is low in fat....I don't eat red meant....Best recipe gets 10 points....LOL....I am expanding my cooking skills

This is one of my favorites - healthy and tasty. No fat added.

Salmon En Papillote

For each serving , make a heart shape out of parchment paper by folding the paper in half. On one half, add a salmon fillet, diced tomatoes, green onion, salt & pepper, dill (or whatever herb you like). Fold over top and fold edges of paper together in a crimp starting at one end. (you can staple the corners if they don't seem to want to stay closed. It is important that it is completely sealed as the fish will steam in it's own juices.

Bake at 350 for 20 minutes. Serve with rice and steamed vegetables.

I'll answer one on this one too. =)

This is a wrap sandwich that will fill you up, and is low in fat.

1.5 pounds of chicken breast
4 cups of broccoli florets, smallish size
1.5 pounds of tomatoes
some olive oil (about 3 T)
1 t salt
1 t pepper
1 t chili powder (I use the hot kind for a slight kick)
1/4 cup of lemon juice

Boil the chicken breasts in seasoned water (I just throw some garlic and salt/pepper in the water, anything will work) until cooked through. Tranfer to a cutting board and let cool. When cool enough, shred the chicken into bite sized pieces with two forks.
Steam your broccoli. When finished cooking, rinse with cold water.
Core your tomatoes and cut into quarters- rinse the seeds(and throw them out) from the tomatoes. Place them on a couple of paper towels face down to drain for about 5 minutes. Spray the tops of the tomatoes with Pam.
Heat a large skillet with Pam and place tomatoes in, cut side down. Cook until charred and beginning to soften. (About 4 minutes) Flip them over and cook until other side is charred as well, 1 or 2 more minutes. Transfer them to a plate to cool and do not rinse the pan.
Heat the 3T oil in the pan, sitr in salt, pepper and chili powder and cook, stirring constantly until fragrant, about a minute. Slowly pour in the lemon juice, careful, it may pop and it will smoke up a little bit. Remove from heat. Stir to scrape up any browned bits.
Coarsly chop the tomatoes and combine everything in a big bowl. Toss to coat well.
Throw some in a tomato basil or spinach wrap and enjoy. It tastes reallllllly good if you let it cool down in the refidgerator first.
