Forget about the stereotype portrayed in Films as this is not accurate,I have read a lot of material over the years concerning exorcisms and this is only the case when angry demons are put to flight by the exorcism.
Generally the demon talks in various languages,Latin,Aramaic for example, and most simply refuse to answer questions at all.
It seems the higher the rank of the demon the more intelligent and authoritive is it`s behaviour.
I have finished reading a decent book on this subject called;
`An Exorcist Tells His Story` by Gabrielle Amorth, published by Ignatius Press, San Francisco.

You seem to be striken with the idea that demons are unintelligentable.
There are demons that are lower than dirt who do not have clarity of words, just as you describe. However there are very intelligent demons who can do many preternatural occurance, speak all the languages of the world, be deceitful, cunning and frankly, charming.
The devil that is most often thought of is Satan. He is the Prince of Darkness. He has worked very hard and has nearly succeeded in making people believe that he doesn't exist or that he is a blathering idiot indeed as one poster says 'foaming at the mouth'. Why indeed have our guard up on such a gargoylian image?

If you are talking about the popular way of portraying demons in movies and such, I think that there are a few reasons.
1. Most movie makers are just trying to sensationalize the whole experience without showing reality. They may not even really know what is real in this realm.
2. Demons don't want us to know how really intelligent they are. If they seem like nothing more than just animals foaming at the mouth, then we will not put up our guard against them and they can attack easier.

That's the Hollywood depiction. Unfortunately, demons are not so easily detected. The Bible teaches us that Satan can transform himself into an angel of light and his minions appear as messengers of righteousness. It is to their benefit to perpetuate the stereotype as hideous, misshapen monsters, and it's not unlikely that they do on occasion take on those forms for just that purpose. That way, when they come to us as fluffy little bunnies or precious fairy-like beings or what we assume angels look like, we are not going to recognize them as demons. They not only speak intelligently, they speak sweetly and persuasively, lacing their lies with beguiling glimpses of truth so it's easier to believe them. The only defense is the Holy Spirit, which indwells those who have trusted Jesus Christ as their savior. Don't be fooled.

Script writers really hate demons. It's because at scriptwriting college, the demons are always dating the hot girls, and are really popular, and cut class and get away with it. And they've usually got really flashy cars, too.
As an equal opportunity employer, I've had several demons work for me. They don't last long, though, mostly they're headhunted by telemarketing firms, who want them for their beautiful speaking voices, and clear elocution.
