The dog may not be able to decipher between man's excitement and man's threat towards the dog, so the dog bites.

The calm person is not threatening to the dog, it's decipherable to a beast.

its like suggesting go ahead and bite me!! the dog knows you are afraid it wil bite you and will think about it more

probably either because it appears more threatening or the hunting instinct of the dog sense it as some type of prey and running away from an agressive dog will probably do it also

Dogs don't like "over excitement". It confuses and scares them. I hope you were kidding...even kids know that.
