If you have the time - BRINE it. Requires about 12-24 hours. Best ever.
If you have less than 12 hours - Marinade it.
If you have no time at all - Season it.

Marinade - and the longer you can marinade pre-cook the better because the meat has the chance of absorbing more of the flavors you wish to introduce.
If you season as you go the seasoning will only permeate the outer parts of the roast.
The correct way to marinate your roast is to do so as far ahead as THE DAY BEFORE and then store in the fridge prior to cooking

season as you go its always goo to use a turky bag and place the roast inside this way the marinade vapors int eh roast not just around it as you would have to marinade by hand

Marinade it and keep on fridge atleast 2 hours. then deep fry it.
