Many (most?) fruits stop ripening when harvested (like tomatoes and strawberries... tomatoes will change color, but not gain flavor), a few fruits however (like bananas) will never ripen unless harvested.
Edit: I'm sorry... the banana will technically "ripen" on the tree, it'll split open and taste like um... bitter cotton, but it is technically ripe. The problem is the starch never gets the chance to degrade into sugar (as what happens with ripe, tasty bananas), but they are technically ripe nonetheless.

About avocado: The avocado fruit does not ripen on the tree, but will fall off or be picked in a hard, "green" state, then it will ripen quickly on the ground, but depending on the amount of oil that it has, the taste may be very different.

That bananas don't ripen when not harvested is bull. We have had bananas in our garden for years and years and believe me: the ripen when on the tree. Bananas that are harvested when not ripe, thus green, are ripened with some sort of a gas.
But, they also ripen after being harvested. Just like Mango's, pine apples and other tropical fruit.
Oranges and other citrus fruit don't ripe after harvest, they just go soft and eventually green and fuzzy (if you know what I mean). This also counts for apples (they age, sort to say, with rotting as final stage when not eaten).

Ethylene gas is released from ripening fruits. The idea of placing a ripe banana or ripe apple in a sack with unripe fruits to ripen the fruits is due to ethylene gas. Induction of fruiting in pineapple plants can also be done.

pineapples dont grow on trees so i doubt if ever they will get chopped down. They grow in the ground
