it should be delicious and spicy .....who made this soup?it was good?

Cream of Tomato Soup

21/2 c diced peeled fresh tomatos
1/4 cup diced onions
1 tbsp veg. oil
2tbps flour
1 cup evaporated milk
1 tsp salt
1/8 tsp pepper
Hot sauce (Optional from 2Tbsp on up according to taste)
3 tbsp sour cream (optional)
Makes 3 -1 cup servings.

Combine tomatoes and onions. bring to a boil, then simmer for 15 minutes

Cool for 10 min. then put in a blender until smooth.

In a sauce pan heat oil, add flour and blend until smooth. Gradually add milk, bring to a boil. Boil for 2 min.

Gradually add tomato and onion mixture. Add salt, pepper and hot sauce. Heat through, do not boil.

Top with sour cream.

Onions finely diced
Garlic finely diced
Stick of celery finely sliced (for fibre and flavour)
Sun dried tomatoes (not in oil, finely diced)
Tin of tomatoes
Veg or chicken stock
Dash of lemon juice.
Mixed herbs (dried basil alone would be good), paprika or chilli would add a kick.
Splodge of tomato puree
A dash of Worcestershire sauce

Saute all the vegetables until soft but not brown.

Add rest of the ingredients. Bring to the boil and then simmer for about 1/2 hour.

Allow to cool a bit and if you want liquid soup put it through the blender. Otherwise serve with sour cream, creme fraiche or Smetana (The real Polish soured cream!) with fresh crusty bread and butter.

You could experiment for spices and flavourings. This is my own recipe. I have been making it since I can remember. And goes well in soup kitchens where I help out!

It tastes better when re-heated.

I made up this soup and was rather plesed with the result!

Tomato Soup with Garlic Croutons

225g tin of tomatoes
1 onion
1 clove garlic
1 tbsp sun dried tomato paste
2 tbsp tomato ketchup
1 tsp vegan worcester sauce
vegetable oil
garlic infused olive oil
bread

To make the soup fry the onion and garlic in a little vegetable oil for 5 minutes. Blend with the tomatoes and return to the saucepan. Add in the tomato past, ketchup and worcester sauce and taste. Add salt and pepper if necessary.

To make the croutons fry bread in garlic infused olive oil (or crush some garlic and put that in olive oil with the bread).

Tomato Soup

Ingredients


1/4 cup olive oil
2 large yellow onions
1 cup chicken stock
2 sprigs tyme or 1/4 tsp dried
18-20 medium sized ripe Roma tomatoes
1 cup heavy cream
Salt and pepper to taste
Pinch of cayenne pepper(less than 1/8 tsp) or to taste
8 large fresh basil leaves, sliced fine
Fresh basil leaves and creme fresh for garnish

Directions

Dice onions and quarter tomatoes. Saute onions in olive oil using a large heavy saucepan over medium heat, stirring occasionally until tender and translucent, about 10 to 12 minutes.
Add tomatoes, chicken broth, tyme and cayenne pepper and continue to cook over medium heat stirring often to prevent scorching, about 20 minutes or until the tomatoes have cooked down to a pulp.Add more chicken stock if the mixture gets to thick.
Puree soup in batches using either a food processor or blender. Strain the tomato mixture through a medium mesh sieve placed over a clean saucepan. Discard remaining peel,seeds and herbs. Reheat soup mixture gently over low heat. Cook until the mixture is reduced to a medium thick consistency. Season with salt and pepper. Add cream and season to taste.Stir in shredded basil. Top with creme fresh and a couple of whole basil leaves.

SPICY TOMATO SOUP

2 (28- to 32-oz) cans whole tomatoes in juice
1 large onion, coarsely chopped (2 1/4 cups)
2 teaspoons finely chopped garlic
1 teaspoon finely chopped fresh jalapeño chile including seeds
2 teaspoons finely chopped peeled fresh ginger
3 tablespoons olive oil
1/2 teaspoon ground cumin
2 1/4 cups reduced-sodium chicken broth (18 fl oz)
1 tablespoon sugar
2 teaspoons salt

Drain 1 can tomatoes, discarding juice, then purée with remaining can tomatoes (including juice) in a blender.

Cook onion, garlic, chile, and ginger in oil in a 4- to 5-quart heavy nonreactive pot over moderate heat, stirring frequently, until onion is softened, about 8 minutes. Add cumin and cook, stirring, 1 minute. Stir in puréed tomatoes, broth, 1 tablespoon sugar, and 2 teaspoons salt and simmer, uncovered, stirring occasionally, 20 minutes.

Working in 3 or 4 batches, blend soup in blender until smooth (use caution when blending hot liquids). Transfer soup as blended to a sieve set over a large bowl and force through sieve, discarding seeds.

Stir in sugar and salt. Reheat in cleaned saucepan if necessary.

Makes 4 servings.

14 ounces (1 can) diced tomatoes, in juice

3 tablespoons olive oil

3 cloves garlic, minced

1 small fresh or dried red chili pepper, seeds removed for less heat

1 carrot, peeled and thinly sliced

1 1/2 cups plain soy milk

1 tablespoon fresh lemon juice

Coarse salt and ground pepper to taste

Parsley leaves, for garnish

1. Heat broiler with rack in middle position of oven. Strain tomatoes, reserving juices. Spread tomatoes on a rimmed baking sheet, drizzle with olive oil, and broil until lightly browned, about 8 minutes.

2. In a food processor, combine browned tomatoes, garlic, chili pepper, carrot, soy milk, reserved tomato juice, and lemon juice; puree until smooth.

3. Transfer to a medium saucepan; bring to a boil over medium heat. Reduce to a simmer; cook 5 minutes. Season with salt and pepper. Garnish with parsley leaves before serving.

use ketchup packets and water. mix it up and heat it on the stove. then you can add the hot spices
