Butter is made of cream and so it contains stearic acid which helps counteract some of the negative effects of the saturated fats. Margarine is made of hydrogenated, rancid vegetable oil and so it is almost entirely Trans-fat. Also, in my opinion, butter is far better tasting, and it is more versatile. If you try to make ber blanc[sic] with margarine you will be sorely disapointed, but if you use butter you will end up with a wonderful sauce that is incredibly tasty.

Butter is dairy, a little fattier but always better
margerine is vegetable oil, not as good and not always a better substitue for butter, butter is the better choice, calorie wise and fat wise the difference is minimal so enjoy your butter.

butter can have animal fat in it and it's also cream. Margerine is mostly Vegetable oil but can have some milk in it but never any animal fats. I like Margerine better it's not as greasy as butter! (my spelling of Margerine is Canadian spelling... not an error...just mention this if I don't a nitpicker will get some undeserved points!)
