I have a recipe calling for 8 skinless, boneless chicken thighs. When I stopped by the closest grocery store last night, they only had prepackaged chicken thighs sold by weight, and it was impossible to tell how many are squeezed into the package...even the guy working in that department couldn't estimate how many I would get in the package. I have looked online and have seen people saying that 8 thighs=1 pound and others saying 8 thighs is closer to 3 pounds. I could just buy two packages which would probably be enough, but prefer not to buy more than I need if one package would do.

I'm thinking that each is going to way between 2 and 4 ounces as a general rule. You realize of course, that you can buy the package and weigh out what you need then freeze the rest for a later use. Boneless and skinless thighs aren't a lot of meat once they've been cooked, so you might end up getting 2 to 3 per serving.

Skinless and boneless I would say they are close to one (1) pound to (1) pound and a half. If your recipe is calling for 8 of them, then you should be able to buzz the butcher at the market and tell him you need eight and ask what's in the package you want to purchase. It's your money. If you feel they are a bit larger than needed, increase your ingredients a little. But from looking at the package, you should know if there are less then eight.

would more than likely be about 1.5 to 2.5 pounds if medium sized and trimmed and deboned , 8 thighs is probably the equivalent of one chicken 2 of each piece right?...

Buy 2 packages and freeze the rest. You can always use it later.

IT DEPENDS ON THE SIZE OF THE BIRD THAT DONATED HER THIGHS OR HIS THIGHS. GO TO A PLACE WHERE YOU CAN VIEW THE NUMBER OF THIGHS IN THE PACKAGE.
