Acid is important to mayo as it helps sterilize it... however if you wish to use pastuerized eggs you can make you own in just a few minutes.
1 egg yolk
1/2 t fine salt
1/2 t dry mustard
2 pinches sugar
3 T water
1 c oil (your choice, I like sunflower)
Whisk together egg yolk, salt, mustard, and sugar until they mixture turns light yellow and fluffier.
Whisk in half the water.
Whisk in a few drops of oil (I like a squeeze bottle) until the mixture thickens a bit, then slowly (VERY SLOWLY) drizzle in half the oil, whisking non-stop (never stop whisking).
Whisk in the other half of the water.
Slowly whisk in the other half of the oil.
Eat within a week.
You can replace oil with a 1:1 ratio of flavored oils and you can replace water with a 1:1 ratio of a water based liquid (like lemon/lime juice for a little sourness or apple juice for use in fruit salad or just be creative)
It is actually a lot easier to make than it sounds and tastes far better than any store bought mayo I've ever tried.

you are probably talking about Miracle Whip, it has a sweet taste to it. That is not actually mayonnaise though, it is "salad dressing."
I would much rather have Hellman's or Kraft

Hellmans is known as "Best Foods" west of the Rockies. :)
And it's simply the best. I won't have any other mayo in the house... especially that Miracle Whip ... which is a sweet (and gross, to me) sandwhich spread.
