I'm not so interested in paintings but among the ones the answerers have mentioned, I like The Starry Night by Vincent Van Gogh, because I love watching stars.

The Birth of Venus - it is an extremely sensitive painting and one of the first paintings of the Renaissance to not include religious subject matter - an extremely important shift in the way art was moving.
