While the embryo is growing, the shell membranes surround and contain the white or albumen of the egg. The albumen provides the liquid medium in which the embryo develops, and it also contains a large amount of the protein necessary for proper development.

Hello,

Egg white is the cytoplasm of the egg which consists of 10% proteins (albumen) and dissloves in water. Its primary function is to protect the egg yolk which is chick after fertilization. It is rich in protein and high in nutritional value and contains very little fat which is good source of protein to babies.

Some important things about egg white:

1) Egg white is the only alkaline food having Ph of 9.0 others are acidic and neutral in nature
2) It acts as an emulsifer in cakes and breads used in food industries
3) The albumen and some important amino acids present in egg only

It is not exactly white but colourless.It is called albumen It provides the liquid medium in which the embryo grows, and it also contains a large amount of the protein It is nutricious to all animals

the white part of the egg is all protein. it has no fat. however the yellow part of the egg is just fat and very little protein. so if you want to make an egg and your trying to loose weight or just want to go more healthy, you can make 2 egg white and throw out the yellow part (or save it for cooking!)
