UFC is a sport. The traditional martial arts were not designed for sport. It's the same reason you didn't see any Thai fighters competing in Western Kickboxing. Would Bill 'Super foot' Wallace or Chuck Norris have been able to take the knees, elbows, and kicks to the thigh that Thai fighters use? The rules are different. Tell a Thai fighter that he can't use knees, elbows, or low kicks and you have taken away 80% of his arsenal. How many REAL fights was Muhammad Ali in? He was a boxer. Boxing is a sport. UFC is a sport. What you see in movies is entertainment. Even the fights in Dragon, The Bruce Lee Story were staged fights for entertainment purposes. Real fights are boring. That's one reason the UFC changed the rules back in the early days. Nobody wanted to see two guys on the ground waiting for the other one to move. That's a real fight, There's no referee to stand you up if the fight isn't moving. There's no bell after three minutes. You probably aren't wearing padded gloves when you walk the streets.
I love the way people are talking about the last UFC and the guy who threw the 'illegal' elbow to the guy on the ground. I'm sorry, but if it's so real, then why is that illegal?
Not all martial arts are geared for sports.
Chuck Liddel and Cro-Cop (interesting that you use one person's name and the others nickname) are the Muhammad Ali and 'Sugar' Ray Leanard of today. They are real...professional fighters.

Actually some people do use Chinese and Korean martial arts. For example, Ryoto Machida knocked out Rich Franklin a few years ago. The problem is most guys that use these styles don't have a ground game and that's highly important in MMA and real life fighting. Oh and Big Spender, that fight with Hercules O'Brien never happened. The character in the movie was based on a British boxer of the same name crossed with a Russian pro wrestler who both left town before the fight actually happened.

May i share a piece of info with you for reference? :
Have you seen the recent movie "Fearless" by Jet Li? inside the film he played a reallife martial art legend back a century ago by the name of "HuoYuanJia" and he had to accept a match imposed by an american boxer by the name of O'Brien (styles and weightclass similar to UFC fighters of today?). This match really took place in real life.
O'Brien wanted the rules to be accustomed to "western boxing" in which you're only allowed to strike at the waist up, while Huo wanted these rules lifted (=no rules) because it would seriously restrict alot of techniques he uses within the CMA system. The rule finally agreed upon on both sides is that the first to knockout the opponent wins.
Remember, O'Brien was the one who asked for the challenge. I won't say who won this match. But i think the above info can be used as a good reference for your question.

because China have been stuck in their own little world until not long ago. Once communist took over, they basically made it very difficult if not impossible for Chinese to share things with other countries. They're totally stuck in their own world where they're "Center of the world" and think if its not created by Chinese, it is not worthy.
So by the time MMA come around they're already totally behind in the martial arts world. If you study history, you'll see exactly same things happen in boxer's rebellion, WWI and WWII. China doesn't learn or use anything they didn't create until they start to get their a$s kick then they swallow their ego and copy other. Now we're witnessing this with MMA.
To be fair, they have made some improvement. You can see this in San Shou. However with all backward laws and belif from communist China, I really doubt we would see any huge improvement in their martial arts system for a while. In fact China banned boxing because they consider it too brutal. So why would they be eager to encourage people to get involve with MMA now?

There is, his name is Cung Le and he's undefeated thus far.
If you're talking about styles other than San Shou, go check out the first few UFCs. The Kung Fu practitioners got their asses handed to them. I think there was a Shaolin monk in one of them. Those first UFCs didn't have a whole lotta rules... just no biting or eye gouging.
As for the comment about the size of Chinese people, it wouldn't matter anyway since there are weight classes involved. And besides, China has some pretty big dudes these days with their nutrition and economy improving. The rest of that comment is pretty ignorant.

Of the Chinese stylists I know the reason they don't compete in places like the octagon and places like that is becasue there are too many rules. Those of my acquaintence train for real, not for trounaments. Get rid of the gloves, the rules and the referee and they might sign up. As for why others don't sign up, I can really say, but if they got rid of the rules, gloves, and referee I would sign up myslef.

Those are all good answers but why don't you people accept the fact that the majority of chinese people are just to small to fight other ethnicities. Sure they could fight lightweight or welterwieght but they won't cus they suck. Look at the japanese, they created most of the most effective fighting styles and they general fighters are big enough to dominate much of PRIDE. But only pride because no offense but somehow the best fighters in the world hands down are European,American, and Brazillan. Why this is is for a simple reason. They are only four styles that work. Muay Tai kickboxing, Western boxing, Wrestling, and Jui - Jistu. Thats it, asian and indian fighters are weak and have small penis's. Just admit it!
