What makes you say the story of Adam and Eve are false?
And the science of adaptation/evolution actually makes this possible. Today we couldn't do that, but back then our bodies may have been a bit different.
By the way, it has happened in history to some degree (with animals at least). All of the bison that exist today came from only eight that were left. There was a lot of inbreading going on there, too.

Oh but I think you forgot something! God created Adam from the dust of the earth. Who knows how many genes were in there!
God put all the needed parts in Adam as well as enough to share with Eve, Obviously he knew what he was doing. Here we are several thousand years later as proof that it worked! You exist and are a descendant of Adam and Eve. How can you argue with that!!
