Cardio is short for Cardiovascular, which is excercise for the heart, lungs, and circulatory system. It's the kind of excercise that burns the largest amount of fat, and works the most important muscles in the body - the heart and lungs.

Anything that increases your heart rate for a minimum of 20 minutes per day - even done in two 10-minute chunks - is a "good" cardio excercise. Take your pulse for six seconds and multiply by 10 - that will tell you your heart rate in beats per minute.

To calculate your target heart rate:
Take your resting heart rate (your heart rate after sitting for a while)
Subtract your age from 220 - this should be your maximum heart rate.
Subtract your resting heart rate from your maximum. This will be your Heart Rate Reserve.
Multiply your Heart Rate Reserve by 60% and then by 80% and add your resting heart rate. This will give you the proper range in which you should be working out...

Example:
31 year old woman, resting heart rate is 72 beets/minute.
220-31 = 189 Max Heart Rate (MHR)
189-72 = 117 Heart Rate Reserve (HRR)
.6*117 = 70.2+72=142.2
.8*117 = 93.6+72=165.6
So her range for best results would be 142-165 beets per minute.

Your question was for specific excercises - you can jog, walk fast, or do any activity at all that elevates your heart rate into this range for 20 minutes per day.

cardio workouts are something that gets your heartrate pumping usually twice the rate of your pulse than it is at rest without really resistance to your muscles like weight training. try jogging, running, an elliptical trainer, treadmill, or jump rope.
