If you slice the stalk off a portabello mushroom and grill or sautee just the top part, it gets a lovely, rich almost beefy flavor to it The advantage to this is that it's easy. That's what I do when I want to cut calories.
There are also some recipes for veggie burgers, if you want something that more closely resembles the look and feel of a traditional beef patty.

Veggie Burger
A homemade substitute for hamburgers, if you ever have a veggie at a party or barbeque. Good, even without bun!

4 patties 20 min 5 min prep
Change to: patties US Metric
1 (15 ounce) can kidney beans, drained,and rinsed
1/2 cup rolled oats
1/2 cup mushrooms, finely chopped
1/4 cup onions, finely chopped
1 carrot, shredded
1/2 cup red bell peppers, chopped
1 clove garlic, minced
2 tablespoons tomato paste or ketchup
1/2 teaspoon salt
pepper, to taste
Throw all ingredients in food processor (or blender, if you dont have one).
Pulse (or blend) until coarsely chopped.
Chill mixture, then shape into four (4) 1/2-inch thick patties.
Now you can wrap and freeze them for later.
To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle).
You can do this in your broiler or on the grill.
Serve like you do your favorite meat patties!

Hello. I had the misfortune to work in the garden burger factory when I was younger, I can tell you how they make them. They grind mushrooms, onions, cheese, tofu, and rice in a hopper and mold the goo into patties which are baked and frozen, then later fried or grilled. You could easily do it your self with a good food processor, and add anything you like, such as a little cooking wine, garlic, spices, or Worcestershire sauce. Have fun!

attempt the following Tofu and vegetable burgers 100g/3½oz..broccoli reduce into small florets 15g/½oz..butter 200g/7oz button mushrooms, style of chopped a million clove garlic, beaten a million X 285g/10oz packet agency tofu 100g/3½oz..unsalted cashew nuts 3 spring onions, finely sliced a million medium carrot, finely grated 100g/3½oz..clean breadcrumbs a million tbsp soy sauce a million tbsp honey salt and pepper flour for coating Olive oil for frying technique a million. Blanch the broccoli in gently salted boiling water for 2 minutes till gentle. 2. melt the butter in a frying pan and saute the mushroom and garlic for 3 to 4 minutes till softened. 3. move to a nutrition processor with the broccoli and all of the different elements. procedure till mixed jointly and season with salt and pepper. 4. style into 8 burgers, coat in flour and sauté for 2 to three minutes on both part over a medium warmth till golden
