The simplest and tastiest French snack I know (I make these every time I have a party, and they always go fast) is to take high-quality dried figs--available at any whole-foods-type market and some supermarkets--and snip them down the center so you can open them up and lay them pretty much flat, kind of like a book. Then take a heaping teaspoon French blue cheese such as bleu d'Auvergne and pile it into the fig, using your fingertips. Then re-close the fig loosely. Finally, press a toasted walnut half decoratively into the top. Almost no effort and very sophisticated.
Here's one more appetizer idea: Stuffed Mushrooms
--20 medium-large cremini or white mushrooms, washed, stems trimmed off
--1/3 cup fresh bread crumbs
--1/3 cup freshly grated Parmesan, the best you can get your hands on
--1 tablespoon finely chopped fresh parsley
--2 tablespoons chopped fresh thyme leaves
--4 small garlic cloves, minced
--1 (small) egg
--salt and freshly ground pepper to taste
--about 2 tablespoons extra-virgin olive oil
--1 large lemon wedge, a little more olive oil (or olive oil spray), nutmeg, and additional freshly grated Parmesan, for serving
With a small sharp knife, remove mushroom stems without damaging caps. Chop stems pretty finely and put them in a medium bowl. Add breadcrumbs, cheese, parsley, thyme, garlic, egg, salt and pepper; mix gently to combine. Stir in about 2 tablespoons olive oil to achieve a thick but smooth texture. Lightly oil a medium baking dish and arrange mushroom caps in it. Stuff caps, making sure to push stuffing down well into centres. Sprinkle (or spray) very lightly with more olive oil. Squeeze lemon wedge over and dust lightly with nutmeg. Sprinkle again with Parmesan. Bake at 400 for about 15 minutes or until softened and tasty-looking. Serve hot or at room temperature. (If you have to transport them from your place to the classroom, they will hold up very well.)
Bon appetit!

Strawberries Romanof is AWESOME. it's a goblet full of strawberries, covered with this amazing creamy sauce. There are a lot of complicated recipes for the sauce but my favorite is made with sour cream and blackberry brandy, with brown sugar. It's so yummy and looks very elegant in a pretty wine glass. Have fun at your party. I mean have fun at your class.
