wusthof trident are the best but pricey. Kyocera are great knives too.
cheaper everyday knives: j henckels or chicago cutlery
Ceramic knives are fragile, tend to chip easily. Stainless steel the best.

Mine are from the Black Classic series.
These are the best knives in any kitchen. You don't have to be a professional to appreciate how right these knives feel in your hands. Forget the fancy names and latest gimics, Wusthof knives are made to work with you for a long, long time.
After over 200 years, Wusthof is still a family owned company, making knives in a single facility. The quality does not waver. Some of the other companies have geared their production to more of the mass market, and their quality is not the same. Wherever you purchase your Wusthof you can be assured you are buying a well made knife.
Start with a 3 1/2" paring, a 4 1/2" utility, an 8" chef's, and an 8" bread knife. I use these 4 knives for 90% of the cutting and chopping I do in the kitchen. You can build your collection from there. Otherwise, you can choose from various knife sets. Some shops will occassionally have Wusthof knives on sale, so keep your eyes open.
Whatever brand you select, be sure you can try the knives first. A well made knife will become a part of your hand, and not just something you're holding. The right knife will be well balanced, and have the right heft. It will feel like it's ready to get to work with you.
I am not a professional, just a cook who appreciates having some of the finer tools in my kitchen. I've had my Wusthof's for over 10 years. Every now and then I use the ceramic sharpener on them, and the edges are always razor sharp and ready for action. If you haven't guessed by now, I love my Wusthof Trident knives!

I have a couple of Wusthof knives and really do enjoy them. The have a great feel and really hold an edge. I found this information on them you can check out. I say look for a high quality knife even if you don't use them much. The investment will be well worth it in the long run.

good on you for wanting sharp knives they are definitely something to spend money on in the kitchen.
I use Henkel 3 star stainless steel knives. I have had mine for about 6 years and have never needed to sharpen them even though I use them every day. They cost where I am (N.Z) about $200 a pop but are well worth it - no more nearly slicing your finger off cutting pumpkins and carrots!
Another good option is Sebaitier (sp?).

JA HENCKELS Santoku knives are the absolute best. They are well balanced and easy to use. I've been using mine for a couple of years and have yet to sharpen them.

I have a set of Tupperware knives - not a big Tupperware fan otherwise, but the knives are FANTASTIC. I had a butcher over for dinner one night, and even he was impressed with the sharpness, design etc!!! They probably cost me about $300AUD, but SO worth it!!!
