I'm assuming you mean leftover that you don't want to eat w/ chips as intended....?
Spread a few layers of phyllo dough out, brushing each layer w/ melted butter. Spread the dip down the center, roll up into a log, tuck ends under, and bake 350ºF for about 20-25 min. Cut itno slices for appetizers or side dish.
Make a pocket either in a chicken breast or under a chicken breast's skin, and shove some dip up under there. Use a toothpick to close. Then season and bake/roast as usual.

The other day I had lamb kebabs with a rocket peto - you could do the same expect with your spinach dip....YUM!

get a big french roll, hallow it out, put the dip in it, and then use the pieces of bread that you took from it at diping utencils along with crackers and fresh veggies
