I always "seer" or brown the roast first.
is there another way to help seal in the juice.
Everything tastse fine, just that the meat is dry.

You're overcooking the meat. Use the low temp for 8 hours, not high. Or if you must use high, only cook 4-5 hours.

I like this recipe. No searing involved.

Easy Crockpot Beef Roast

1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix

Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove.

Crock pot cooking does really well with cheaper cuts of meat.

Not as well with the better ones. That's a basic rule with crock pots.

A chuck (pot) roast will turn out much better than a bottom round roast. A turkey breast will be dry also. A meatlaof does pretty well.

The more expensive cuts of meat....I leave for the oven.

It's fine to brown your meat before cooking it. It's not necessary, but will have a slightly better flavor if you do.

use cheap meat, cheaper cuts of meat have more fat. As these break down during the slow cooking process they keep the meat from breaking up and drying out. Otherwise don't cook it as long.

Yes, add water. You don't need much about 1 or 2 cups.

You can also add broth or wine for more flavor.

Carrots, onions and celery will give off liquid and add flavor.
