Depends upon what you want it to do. If you want it to melt, use provolone or Muenster.
If you want sharp flavor, use romano or parmesan.
fI fyou want a soft cheese w/ bit, any blue cheese or baked brie (w/ toppings) would be good.
To make a fondue, it's gotta be Swiss (Emanthaller, specifically).
If you want to top a hamburge, good ol' cheddar or American is your best bet.

For Mexican a Mexican blend or Monterey Jack is good. For Italian an Italian blend or Provolone is great. For a French dish Grierre cheese would probably be appropriate. Good old Wisconsin cheddar go well with most classic American dishes.

Chedder is a good all-rounder, parmesan for flavour, mozzerella for texture - not too gooey when melted, haloumi doesnt melt so its good in warm salads.

parmesan is nice, depends what you are going to make, you can use Cheddar, just buy a nice one, not a cheap one
