I have a new oven. I have been using a Jennair for years now the new one seems to burn the outside while the middle is not done. I use the same temperature settings as before. The more I experiment the results don't get mych better. What's going on.

The temperature is too high.

I would suggest that the heat is too high, you need to go down and cook more slowly so the middle can catch up to the outside and the outside doesn't burn. If you've moved from a gas oven to a fan forced oven, you need to use a much lower setting.

Using a lower setting will allow the middle to slowly warm up and cook over a long period. High settings tend to cause outside burning. Good luck.

Invest in an oven thermometer (they are inexpensive). Move it around at different rack levels and front/back/side positions so you can document the actual degree difference. From there you can try one of two things: consult the new oven manual to see if there's a troubleshooting section; and/or call the customer service for the new oven to report the problem. It's easier to explain the problem if you have actual degree differences to report. If you can't re-calibrate it yourself, you may have to get a technician in. It would be a pity with a new oven; hope it's under warranty.

THERMOMETER: We have had a problem with our oven since we bought it. Tendency is for my oven to overheat. I always place a thermometer in my oven before turning it on to preheat: I set oven to the temperature required in the recipe. Before I put the first pan in the oven, I make sure the thermometer is holding at the correct temperature.

Usually for a 350 degree oven, I have to turn my oven to 325, for instance.

Another thing I notice is that by using a darker pan, my cookies turn darker and I time all the trays equally.

Buy an oven thermometer and verify that the dial is correct. Try it in several positions in the oven and make a mental note.
