Chocolate Pancakes

For a decadent but healthy breakfast
Chocolate for breakfast feels decadent in these cocoa and soy milk pancakes. Fresh strawberries are the perfect accompaniment. Add maple syrup, if you wish. This batter also makes crisp waffles. Soy flour adds 5 grams of protein to this recipe.

1 c unbleached all-purpose flour
2 Tbsp soy flour
3/4 c Dutch-process cocoa powder
2 tsp baking powder
2 Tbsp granulated sugar
3 large eggs

3 Tbsp melted unsalted butter or canola oil
1 1/2 c plain soy milk
Pinch of salt
Confectioners' sugar
1 pt fresh strawberries, hulled and sliced, optional

1. Sift the all-purpose and soy flours, cocoa, and baking powder into a medium bowl. Mix in the granulated sugar. In another bowl, whisk the eggs with the butter or oil, soy milk, and salt until well combined. Add the wet ingredients to the dry mixture, mixing just until they are blended. The mixture should be slightly lumpy and have the consistency of cake batter.

2. Coat a medium, cast-iron skillet with cooking spray or use a nonstick pan. Place the pan over medium-high heat. Ladle a scant 1 cup batter for each pancake into the pan. Cook until bubbles form on the surface and the edges darken, about 2 minutes. Turn and cook until the pancake resists slightly when gently pressed in the center with your finger, about 2 minutes. Repeat until all the batter is used up, keeping the cooked pancakes covered and warm in a 200 degree F oven until they are all ready to serve. Dust lightly with confectioners' sugar and serve accompanied by sliced strawberries, if you wish.

Makes 5 Servings (15 5" pancakes)

Lemon cod with basil bean mash is easy and healthy food . it takes about 8 minutes to prepare and about 18 minutes cook Ingredients 2 small bunches cherry tomatoes, on the vine 1 tbsp olive oil chunks skinless cod or other white fish fillet zest 1 lemon, plus juice of ½ 240g pack frozen soya beans 1 garlic clove bunch basil, leaves and stalks separated 100ml chicken or vegetable stock Method 1.Heat oven to 200C/fan 180C/gas 6. Put the tomatoes onto a baking tray, rub with a little oil and some seasoning, then roast for 5 mins until the skins are starting to split. Add the fish to the tray, top with most of the lemon zest and some more seasoning, then drizzle with a little more oil. Roast for 8-10 mins until the fish flakes easily. 2.Meanwhile, cook the beans in a pan of boiling water for 3 mins until just tender. Drain, then tip into a food processor with the rest of the oil, garlic, basil stalks, lemon juice and stock, then pulse to a thick, slightly rough purée. Season to taste. 3.Divide the tomatoes and mash between two plates, top with the cod, then scatter with basil leaves and the remaining lemon zest to serve.

One of my favs:

Buy a package of brocolli slaw
Morning Star Farms veggie bacon
Spring onions
Garlic
Blue cheese (or any cheese you fancy)
Cooked brown rice

Stir fry the slaw and onions, in a bit of olive oil with the garlic
Nuke the faux bacon until crisp, crumble into the hot veggies
Crumble just a little of the cheese (a little isn't bad for you) on top
Serve over brown rice
