I would click on Start then All programs. It should be in that listing. You can right click on it and do copy then paste it into the startup group or on to you desktop for easy access.

Right-click on your start menu, hit properties, next to start menu option, click the customize button, towards the bottom you will see an E-mail checkbox with the default email program to be used.
