1. The cells already contain a lot of water, so you can demonstrate osmosis that causes the cells to lose water as well as osmosis that causes the cells to gain water.
2. Potatoes are cheap and easily available.

I don't really know, but I would guess that potato has an open cell structure, so that fluids can pass through it.
