None of those as above if we were to talk about the animals in my system. In my system there are only five 'true' animals and only two of them are stated above. All others are mixes of the science behind the animals. e.g. snake is really a mix of two others, same with even crane. I would say that my favourite is Dragon Kung Fu because for us it embodies all five animals and their sciences. If you have an understanding of them all and someone were to only use one, say tiger, then we know the science of how to deal with tiger.
I am guessing though that your perception of these Kung Fu styles are different than mine as my system is a unique one and not as widely known.
However, if I were to pick the generalised ones that you have put down above then I would say, 'Snake' for its fluidity and agility.

I've always had a penchant for Fu Jow Pai. While there was a balanced study of all 5 animal practices in Hung Ga, I've always preferred Tiger and Snake when it comes to animal training.
Now though, I stick with Xingyiquan in terms of gung fu training. Less b.s. involved, more straight forward combat application than pretty animal form training.

I have a black sash in five form kung fu, why dont you consider dragon a true study?
and my fave is a mix of tiger snake and crane.

Tiger because the ancient masters that studied it could claw through clothing and skin. Just like a tiger. Oh, you forgot Crane.

Since you have left out dragon, I'll say tiger. I trained in the northern styles which are sort of different from the more popular southern styles.

I prefer drunken. I'll never be a snake or a monkey, nor will I ever fight one, but I get drunk on a regular basis, so the training really helps.
