Like u know using portobello caps for meatless burger patties. Can I just grill them as is or what can I use to substitute the vinegar? In all the recipes they say u need to soak in vinegar.

You don't need to soak them in vinegar(I've actually never heard of that). I put mine in a bag with some Italian dressing. Let them soak for a little bit and then grill them. All kinds of good flavor.

Vinegar is a mild acid and is used to tenderize food.
You can substitute another acid, such as lemon juice or Coca Cola, but the flavor may be affected.

No - not at all.

Portabello mushrooms are very versatile - you can simply cook them on the stove in olive oil...
That will make a tasty sandwich but it will just be mushroom on bread...

Add some garlic and other favorite seasonings (possibly some butter in with the oil) and wallah!

I make them and dip them in Italian dressing on both sides and throw them on the grill (or fry pan) Then I put roasted red pepper and swiss cheese on them.

i don't see why you can't leave the vinegar out
