I am looking for new dishes to cook to sell at the local country market. We already have a selection on Pies, Quiches. Curries, Pasta dishes. What else could I make either with meat or with out. I want to produce more healthy, food so want to move away from pastry. Polite suggestions please.

Lasagna and vegetable burgers.Vegetable Risotto, Hot pots and wholesome soups. Have you tried bacon, cabbage and potatoes? Diced Pork and apple with rice, is lovely too. Try baking various breads especially to go with the soups. If you have refrigerated equipment, you could try selling salads, cheese and chutney, chicken and bacon, prawn, etc. Wish I lived near this country market. Good luck.

I'm from Singapore and just had lunch with an English visitor today. I brought her for a taste of Mandarin Chicken Rice at Chatterbox. This is one of the first local dishes that come to mind as the rice is prepared very specially. Some foreigners do not usually take rice for carbo intake so coconut rice would make it more unique. I also brought her for a round of local ice desserts - ice kachang and chendol. Not only pleasing to the taste buds, their presentation are also attractive and eye catching, what with all the colourful ingredients. If I could take her for a few more meals, the three other dishes I would recommend are: Yong Tau Foo - They have evolved far from the basic soy and vegetable products. And there are so many different varieties! Choosing seven is just never enough. Plus there's the health factor. Rojak - Just like our culture here, rojak has a mixture of the sweet (radish) and savoury (dough sticks/you za kueh). Chilli Crab with Deep Fried Buns/Mantou - I believe all tourists, when in an Asian country, should soak up the spice! The fun comes in using their hands to pry the crab shells open and then dipping their buns into the chilli gravy. Of course, being a good host, I will let them have the claw - the best part =) There's so much more they should try like Nasi Lemak, Laksa, Mee Siam, Kueh Pie Tee, etc. But these are my top five picks!

I like CLEAN FRESH colorful food. Like do a Veggie lasagna with eggplant, or a fresh take on enchiladas with black beans instead of refried. Do a stuffed chicken breast with a light rice & cheese inside. Also a GREAT light fish is Talapia ( I DO NOT eat seafood or fish if it smells or taste fishy ) personally but this is the BEST fish I have eaten grilled, fried, or baked YUMMY & no fish smell to boot & it holds for a full day in the fridge I HATE left overs but I actually ate fish the next day!

These are things I would LOVE to pick up from my local market!

when I think of country cooking, healthy doesn't seem to fit, but maybe that's just me. I think more of hearty comfort type dishes. Chicken fried steak, garlic smashed potato's with either collard greens or green beans and don't forget the corn bread to sop up the greens juice. That kind of thing. I also like polish sausage with grilled onions and a big helping of mac & cheese. YUMMEEEEEE Chicken and dumplings are good too.

Pate came to mind. Easy to make and you could pep it up with interesting flavours like port or whiskey (don't know if that would work, you'd have to do some trials first on your friends who will be honest with you.)
You could make them low fat and that would fit in with the healthy ethos.

Sorry I would never buy anything from this place. I cook everything homemade.

If I would be someone who bought food like this, I would probably be looking for cheesecake.

: )
